Naturally sweet and healthy, these roasted beets are tossed with traditional Moroccan flavours to create a simple yet delicious salad that complements a variety of meals.
Preheat oven to 425 degrees. Wrap beets in aluminium foil, and place in baking dish. Roast beets in oven for about 35-45 minutes, or until tender and can be pierced easily with a fork. Remove, and let cool.
When cool enough to touch, remove skins from beets by rubbing gently with a paper towel. Dice the skinned beets and place in a medium-sized bowl.
Add in remaining ingredients, and toss well to combine. Serve at room temperature or cold.
