This is a delicious sandwich recipe perfect for breakfast or brunch.

Ingredients

  • Egg wash (1 egg white + 2 Tbsp water)
  • 8 squares Phyllo dough
  • 2 hard-boiled eggs
  • 2 slices low-fat cheddar cheese
  • 2 Tbsp sesame seeds
  • 2 lettuce leaves
  • 1 medium tomato
  • 2 tsp honey mustard
  • 1/4 cucumber

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Place one sheet of dough on a pan lined with parchment paper and lightly coat with cooking spray.
  3. Top with 3 more sheets of dough, continuing the process.
  4. Brush the top sheet with the egg wash, then sprinkle on the sesame seeds.
  5. Repeat the process with the other 4 sections of dough.
  6. Bake for 10-15 minutes
  7. Slice the eggs, tomato and cucumber.
  8. Slice the phyllo packets in half.
  9. Spread on the honey mustard and fill with the egg, cheese, tomato, lettuce and cucumber.
  10. Serve immediately.
