CHICKEN BRUSCHETTA RECIPE

Light and refreshing, this simple, yet mouthwatering chicken recipe, is the perfect healthy dinner recipe for a busy day.
 
 
Ingredients
  • 1 lb chicken breast skinless, boneless
  • 2 large roma tomatoes finely diced
  • 1/4 cup fresh basil finely chopped
  • 2 cloves of garlic minced
  • 1 tbsp plus 1 tsp olive oil
  • 1 1/2 tsp balsamic vinegar
  • 1 tsp dried parsley
  • 1 tsp dried oregano
  • Salt and pepper to taste
 
Instructions
 
  1. Cut chicken breasts into 4 equally sized fillets. Season each side of the chicken with the parsley, oregano, and salt & pepper.
  2. Heat 1 tsp olive oil over medium-high heat in a medium-sized, nonstick skillet. When the oil is hot, add chicken, and cook for about 4-5 minutes on each side, or until chicken is browned and entirely cooked through. Remove from heat, cover with a lid, and allow to sit for about 5 minutes to rest.
  3. Meanwhile, make bruschetta by combining tomatoes, basil, olive oil, garlic, balsamic vinegar, and salt & pepper in a medium-sized bowl.
  4. Plate chicken breasts, and top each with about 1/4 cup of the bruschetta. Drizzle on some extra balsamic, if desired.
