This tasty recipe is a healthier version of spaghetti and meatballs and a perfect replacement to the high-calorie pasta noodles.

Ingredients
  • 4 medium zucchini
  • 1 egg
  • 1 lb ground chicken breast
  • 1 25oz jar marinara sauce
  • 2 tsp dried basil
  • 2 tbsp grated parmesan cheese
  • 2 cloves of garlic (minced)
  • 2 tsp dried oregano
  • 2 tbsp whole wheat Panko
  • 1 tsp dried parsley
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Preheat the oven to 400 degrees and line a rimmed baking sheet with parchment paper.
  2. In a large bowl, mix together all ingredients except for the zucchini and pasta sauce.
  3. Shape the ground meat mixture into 24 meatballs and place them on a baking sheet.
  4. Bake them in the oven for about 15-18 minutes, or until meatballs turn brown on the outside.
  5. Take a large saucepan, place the marinara sauce with the cooked meatballs in it and simmer on low until sauce is heated through about 3-5 minutes.
  6. Meanwhile, wrap the noodles completely with paper towels and place them in a large, microwave-safe dish.
  7. Heat in the microwave for about 2 minutes.
  8. Place the noodles into 4 different serving bowls. Top each with meatballs and pasta sauce.
