Mini Bell Pepper Nachos Recipe

This is a low carb recipe. It is topped with traditional nachos and served with nutritious bell peppers.

  • 12 oz bag of mini bell peppers (halved and seeded)
  • 1 lb ground chicken breast
  • ½ medium onion (minced
  • 3 cloves garlic (minced)
  • 1 cup canned black beans (drained and rinsed)
  • 1 cup reduced fat Mexican style cheese (shredded)
  • ¼ cup fresh cilantro (chopped)
  • 1 tsp chili powder
  • Juice of 1 lime
  • Salt and pepper to taste
  1. Preheat the oven to 400 degrees.
  2. Use a baking sheet with parchment paper. Use cooking spray to mist it.
  3. Put all the mini bell peppers in a single layer on the baking sheet.
  4. Spray oil over a nonstick skillet set at medium heat.
  5. Put in onions and garlic. Saute them for two minutes. Now add the chicken, chilli powder, salt, and pepper.
  6. Cook until the chicken turns brown.
  7. Pour in black beans and lime juice.
  8. Sprinkle the Mexican style cheese evenly over it.
  9. Put it into the oven and bake for ten minutes. Make sure the cheese gets melted completely.
  10. Now remove it from the oven and drizzle the queso dip over the top. Heat it in the oven again for two minutes or so.
  11. Remove it from the oven. place it on the plate and top it with fresh cilantro and any other toppings of your choice.
