POMEGRANATE, APPLE, AND DATE SALAD RECIPE

This is a lovely weight watcher recipe which is super easy to make. It is a great complementary meal to any kind of dish. You are going to enjoy it for sure!

 

 

 

Ingredients
  1. 1 6 oz bag of arugula
  2. 1/2 a small red onion thinly sliced
  3. 1 medium apple cored and diced
  4. 6 dried dates chopped
  5. 1/2 cup pomegranate seeds
  6. 1/4 cup walnuts chopped
  7. 1 tbsp olive oil
  8. 2 tbsp red wine vinegar
  9. 1 tbsp honey
  10. 1 tbsp fresh lemon juice
  11. 1 clove of garlic minced
  12. Salt and pepper to taste
 

 

Instructions
  1. In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, garlic, honey, and salt & pepper.
  2. Combine remaining ingredients in a large bowl. Pour in dressing and toss to combine.
