This veggie pilaf is a great way to add colour to your meal and spice up your vegetables. This simple pilaf combines zucchini, squash, green beans and peas
Heat the oil in a large skillet.
Sauté the squash and zucchini for 5- 10 minutes, or until tender.
Add the green beans, peas and rice.
Cook for an additional minute.
Add the seasonings and cook for 1 – 2 minutes.
Adjust seasonings to taste and serve hot.
